Restaurant Pearl Morissette depends on clean, high-quality water to provide drinking water to its restaurant clientele.

While the restaurant is connected to the municipal water system, it was looking for an environmentally friendly way to provide its customers with premium drinking water without having to resort to bottled water. In 2018, Restaurant Pearl Morrissette contacted Aclarus for a solution to treat their municipal water for drinking purposes.

THE ACLARUS SOLUTION

Aclarus system designers worked with Restaurant Pearl Morissette to determine key factors like the flow rate of the water, the treatment required and ultimately the required ozone “dose” and system design that was necessary for success.

Once Aclarus installed the system, the restaurant used the ozonated water for its primary needs – producing premium drinking water, as well as cleaning and sanitizing. In addition, they employed the system to: clean and sanitize fresh produce and foraged wild herbs; clean the grease trap prior to disposal (thereby reducing wastewater contamination in the septic tank), and disinfect the onsite meat hanger. Daniel Hadida, owner and chef of Restaurant Pearl Morissette, is fully convinced of the effectiveness of ozone and the Aclarus system.
